自製手工面皮 今天來做手工面皮,學會了這個面皮做法,以後再也不要出門買面皮吃啦 用料 普通面粉 300克 食鹽 2克 水 適量 酵母粉 放面筋裏 做法步驟 1、先將面粉放入廚師機的攪拌鍋裏,加入2克食鹽混合均勻後,開低檔,然後邊攪拌邊倒入水,水一定要慢慢加,不能一次性全部加完。 2、中間反復檢查面團,面不能軟,要稍微硬一點點,不然太軟洗出來的面筋會很少。 3、轉4檔打5分鐘,面團稍微勁道一些即可。 4、將面團取出,開始洗面,洗面的過程會有點漫長,我洗了大概30分鐘,洗了三盆水,洗過的面水單獨放一個盆裏,這個面水就是為了沈澱出面皮水的,直到面團全部將面洗幹凈,只剩面筋即可。 5、洗到水完全是清的 6、面筋加2酵母粉,將酵母粉完全和面筋揉和之後,蓋上保鮮膜發酵。發酵好之後上鍋蒸熟即可 ,蒸熟切開備用。 7、面水要沈澱4個小時以上,沈澱好的水倒去,留下底下的面皮水,就是澱粉水 8、加2可食鹽混合勻之後再次攪拌均勻。米飯勺舀一勺面皮水盛到披薩盤中,也可以用其他平盤代替,燃氣竈開中火一直燒一鍋熱水,直接將平盤放在熱水上 9、蓋上鍋蓋 10、直到面皮頂出冒泡就熟了 趁熱揭開即可。做好的面皮,一張張放好 11、備喜歡吃的配菜啦 12、喜歡吃啥放啥吧 13、如果你也喜歡吃面皮 不妨來試試這個方法。如果你覺著很麻煩,可以直接購買:阿寬紅油麵皮 螺絲粉 螺螄粉 柳州螺螄粉 螺螄粉是什麼做的 螺絲粉是什麼 螺螄粉Ptt 阿寬紅油麵皮
